Wagyu Ribeye Bites — Butter Soy Finish

Restaurant quality in 30 minutes — rich, fast, and precise.

Wagyu Ribeye Bites - Butter Soy Finish

Tender wagyu ribeye cubes, cooked fast and finished in a fragrant butter soy glaze — this is restaurant quality in under 30 minutes. Rich marbling, precise timing, and a sauce that comes together in the pan while the beef rests.

Lemon Herb Chicken Plated Dish

                               20 Mins.                           10 Mins.                2 as main/ 4 when shared

🛒 Ingredients:

Beef

  • 200g wagyu ribeye or sirloin, cut into 2–3cm cubes
  • 1 tbsp neutral oil (high smoke point) — for wagyu at this temperature, oil choice matters more than you might think. Does it matter which oil you use when cooking meat? covers exactly what to reach for and why.
  • Fresh ground black pepper

Butter Soy Finish

  • 1 tbsp butter
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • Optional: sliced spring onion and sesame seeds to finish

👨‍🍳 Instructions:

Prep

  1. Bring wagyu to room temperature — 20 minutes out of the fridge.
  2. Pat dry thoroughly for a clean, even colour.
  3. Season lightly with pepper only — add salt after cooking to avoid drawing moisture to the surface before it hits the pan. If you're wondering what makes wagyu different from regular beef, our Wagyu vs Black Angus guide explains exactly what you're paying for, and marbling scores explained covers how fat distribution affects flavour and texture in the pan.

Cook

  1. Heat a cast-iron or heavy stainless pan until screaming hot.
  2. Add oil, then wagyu cubes in a single layer. Cook 60 seconds per side for colour and depth of flavour — this is about caramelisation, not locking in juices, which is one of the most persistent myths in home cooking.
  3.  Remove cubes and rest briefly — even 2 minutes makes a difference. Why resting matters is worth understanding before you cook something this premium.

Butter Soy Finish

  1. Reduce heat slightly.
  2. Add butter, garlic, and soy sauce. Cook 30 seconds, swirling until fragrant.
  3. Return wagyu cubes, baste quickly, then remove immediately to serve.

🍽️ Serving Suggestions:

  • With steamed rice and stir-fried greens
  • As a sharing plate with garlic bread or roasted vegetables
  • Over mashed potatoes for a fusion comfort dish

✨ Pro Tip:

Never cook wagyu beyond medium-rare — the fat stops rendering and turns greasy. Fast heat, short time, immediate rest — that's the whole technique. Wagyu ribeye bites are one of those dishes that feel like they belong in a restaurant — they don't.
