Wagyu vs. Black Angus: Why I Don’t Always Pick the Most Expensive Steak on the Menu

When you’re running a premium meat business in Hong Kong like I do at themeatguyhk.com,  people assume you're always reaching for the highest-grade cuts. And don’t get me wrong—our M7/9 Wagyu is incredible. It’s the kind of beef that practically melts on your tongue. But here’s the thing: just because something is more expensive or more marbled doesn’t always mean it’s what I crave when I want a great steak.

Sometimes, I find myself reaching for a good ol’ Black Angus ribeye or sirloin. Here’s why that doesn’t make me crazy—it just means I like steak in all its glorious variety.

The Richness Factor: When Less is More

Wagyu beef is prized for its intense marbling. That fat distribution gives it that buttery texture and luxurious flavor—but in large portions, it can feel a bit too indulgent. Personally, I love Wagyu in smaller servings, maybe as part of a tasting board or a special occasion dinner. It’s a delicacy—rich, soft, and subtly sweet.

 But if I’m firing up the grill for a proper steak night? That’s when I start thinking about Black Angus.

Black Angus: Bold, Beefy, and Satisfying

What I love about Black Angus is its balanced marbling and classic beef flavor. It’s got a more robust chew, a bolder umami punch, and it feels like a meal. For steak lovers who want that familiar, hearty experience with a glass of red wine or a side of fries, Black Angus just hits differently.

Texture Matters

Some steak fans live for the ultra-tender texture of Wagyu, where you barely need to chew. But sometimes, I want that satisfying bite—that resistance that reminds you you’re eating steak. Black Angus, especially a ribeye or sirloin, offers just enough chew to make each mouthful memorable.

It’s About Occasion, Not Just Prestige

Wagyu beef is fantastic for impressing guests or elevating a meal. But not every steak night needs to be a black-tie event. Black Angus is my go-to for a cozy dinner, a weekend barbecue, or a night when I just want a flavourful, fulfilling steak without the richness overload.
