20 Mins. 10-12 Mins. 3-4
π Ingredients:
Beef
- 800g Australian rump (4 × 200g steaks)
- 1 tbsp vegetable oil
- Pinch of salt & pepper
Salad Base
- 2 cups mixed salad leaves (or shredded lettuce)
- 1 cucumber, sliced into batons
- 1 carrot, julienned
- ½ red onion, thinly sliced
- ½ cup cherry tomatoes, halved
- ½ cup fresh herbs (mint, coriander, Thai basil)
Dressing
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp sugar 1 garlic clove, minced
- 1 red chilli, finely chopped (optional)
π¨π³ Instructions:
Prep
- Mix dressing ingredients until sugar dissolves.
- Arrange salad base and herbs in a large bowl.
- Rump steaks typically come with a fat layer along one edge. For a salad, trimming most of it before cooking keeps the dish light and clean — whether to trim fat before cooking depends on the dish, and this is one where less fat works in your favour.
Cook the Beef
- Season rump steaks lightly.
- Heat oil in a pan.
- Cook steaks 2–3 minutes per side for mediumβrare. Rump is lean and rewards quick, high-heat cooking — if you're new to cooking it, why lean cuts go wrong and how to fix them is worth a read before you start.
- Rest 5 minutes, then slice thinly — and always against the grain, which makes a noticeable difference in tenderness with rump.
Assemble
- Toss sliced beef with salad and dressing.
- Top with extra herbs and chilli if desired.
π½οΈ Serving Suggestions:
- With jasmine rice on the side
- As a light main course
- In lettuce cups for a fingerβfood option
β¨ Pro Tip:
Slice rump thinly and while still warm — it absorbs the dressing better and keeps the salad juicy.
Any leftover sliced rump keeps well in the fridge for a day and works beautifully cold in rice paper rolls or noodle bowls the next day.
