Slow-Cooked Beef Brisket (1kg) - Oven or Air Fryer

Low and slow or fast and tender — this 1kg beef brisket delivers deep, rich flavour whichever method you choose. A smoky spice rub, a savory braising base and two foolproof cooking methods make this one of the most satisfying cuts you can put on the table. Worth every minute.

🛒 Ingredients:

Brisket
- 1 kg beef brisket (flat or point)
Rub
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp brown sugar
- ½ tsp dried thyme or oregano
Braising Base
- 1 onion, sliced
- 3 garlic cloves, smashed
- ½ cup beef stock
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp apple cider vinegar
👨🍳 Instructions:
Prep
Pat brisket dry. Mix all rub ingredients together and coat the brisket evenly on all sides.
Sear (Optional but Recommended)
Heat a little oil in a pan over medium-high heat. Sear brisket for 2–3 minutes per side until browned.
OVEN METHOD (Classic Low & Slow)
Set Up
Place onions and garlic in a roasting tray. Pour in stock, soy sauce, Worcestershire sauce, and vinegar. Place brisket on top, fat side up.
Cook
Cover tightly with foil and bake at 150°C for 3–3.5 hours until tender.
Finish
Rest brisket for 15–20 minutes before slicing against the grain.
Simmer pan juices for 5 minutes to make a simple jus.

AIR FRYER METHOD (Fast & Tender)
Set Up
Place onions and garlic in a foil tray that fits inside your air fryer basket. Add stock, soy sauce, Worcestershire sauce, and vinegar. Place brisket on top, fat side up.
Note: A 1kg brisket in a foil tray requires a reasonably large air fryer basket — check your tray fits comfortably before you begin.
Cook
Cover loosely with foil and air fry at 150°C for 90 minutes.
Remove foil, then cook at 180°C for 15–20 minutes to brown the top.
The brisket is ready when a knife slides in easily with little resistance.
Finish
Rest brisket for 10–15 minutes before slicing against the grain.
Simmer tray juices for 5 minutes to slightly thicken.
