🛒 Ingredients:
Fish
- 2 black cod steaks (about 180–200g each)
- Salt & pepper
- 1 tbsp olive oil
Brown Butter Sauce
- 2 tbsp unsalted butter
- 1 tbsp capers, drained
- 1 tbsp lemon juice
- ½ tsp lemon zest
- 1 tbsp chopped parsley
👨🍳 Instructions:
- Pat cod steaks dry with paper towel. Season both sides with salt and pepper.
- Heat olive oil in a non‑stick pan over medium‑high heat.
- Sear the steaks on one flat side for 3–4 minutes until golden, then Flip and cook another 3–4 minutes until just opaque in the centre. Not sure what "just opaque" looks like? Here's how to tell when fish is cooked without cutting it open.
- If your steaks have skin running around the edge, stand them briefly on that edge for 30–60 seconds to crisp it.
- Remove from the pan and set aside.
- In the same pan, add butter and cook until it turns nutty brown (about 2 minutes).
- Add capers and lemon juice; swirl to combine.
- Spoon the brown butter sauce over the fish and finish with lemon zest and parsley.
🍽️ Serving Suggestions:
- With roasted veggies or mashed potatoes
- Over a fresh green salad
- Sliced into wraps or grain bowls
✨ Pro Tip:
Black cod's high fat content makes it almost impossible to dry out — it stays moist even if slightly overcooked. The brown butter adds depth without masking the fish's natural sweetness. Feeding three? Add a third steak — the sauce quantity will comfortably cover it.
