Why Not Every 200g Salmon Portion Looks the Same

Why Not Every 200g Salmon Portion Looks the Same

Why Not Every 200g Salmon Portion Looks the Same

Not all 200g salmon looks the same

Most people assume a 200g salmon portion is a single, uniform thing: same shape, same thickness, same geometry. But salmon doesn't grow in cubes, and a fillet isn't a factory-made rectangle. If you cut a whole fillet into ten equal-weight portions, you get ten pieces that weigh the same, and look completely different. This blog explains why, and why that variation is not only normal but unavoidable.

1. Start With the Whole Fillet

Salmon fillet

A full salmon fillet is usually 2kg+, depending on the fish. From that single fillet, you can cut roughly ten 200g portions. But those ten portions come from three distinct anatomical zones:

  • Head end. thicker, more triangular, often with a natural taper
  • Mid-section. the classic "perfect" rectangle most people imagine
  • Tail end. thinner, longer, more tapered

Even at identical weight, these pieces will never look the same, because they come from different parts of the fish. Our salmon is fresh, hand-cut into 200g portions, so that figure is always approximate. A piece might land slightly above or below 200g depending on exactly where the cut falls.

2. Weight Is Uniform. Shape Is Not.

When you portion by weight, you're controlling one variable: mass. Shape is determined by natural taper, muscle thickness, fat distribution, and the geometry of the fish itself. A 200g head-end piece might be short and thick. A 200g tail-end piece might be long and narrow. Both are correct. Both are fair. Both are 200g.

3. Why We Don't Only Sell the "Pretty" Centre-Cuts

This is the part customers rarely think about, and the part where our transparency becomes a strength. If we only sold the neat, rectangular mid-section pieces, half the fish becomes unsellable, prices would rise dramatically, and customers would unknowingly subsidise the waste. The honest reality is simple: a whole fillet produces a mix of shapes, and the only fair way to sell salmon is to mix those pieces evenly across customers, not reserve the centre-cuts for a lucky few. It's the same fairness principle we apply to ribeye ends, brisket points, and pork belly taper. The whole product gets used, not just the photogenic part.

4. Fresh vs Frozen: A Different Kind of Consistency

Worth knowing if you're comparing options: our barramundi also comes in 200g portions, but arrives frozen rather than fresh. Frozen portions are typically more uniform since they're often cut and blast-frozen at source before shipping, so if consistent shape matters more to you than fresh-cut salmon, barramundi is worth considering. If you do go the frozen route, it's worth knowing the right way to thaw it so you don't lose texture in the process. Neither option is better; they're just different products with different trade-offs, and it's part of why we're upfront about what you're actually getting with each.

5. Why Shape Doesn't Affect Cooking

Shape variation doesn't affect flavour, freshness, quality, or nutritional value. It only affects appearance, and occasionally cook time, and even then only slightly. Most home cooking methods (pan-searing, baking, air-frying, grilling) adapt naturally to the piece you have. Some dishes (poke bowls, salads, pasta, parcels, curries) eliminate shape entirely because the salmon is cubed or flaked.

6. Want a Different Size?

If none of the standard 200g portions suit what you're planning, salmon can be cut to a different size with a little notice, the same way we handle custom requests for our other cuts. Just ask when you place your order.

The Honest Close

The variation isn't a flaw. It's the truth of how salmon grows and how fillets portion. A 200g piece is always approximately 200g, but it will never be identical in shape to the next one, and that's exactly how it should be. If you want the neat centre-cut look every time, the only way to achieve that is to waste half the fish. We don't do that. We portion fairly, evenly, and honestly, and we show you the whole story rather than hiding it.
