How to Plan a BBQ in Hong Kong — Without the Stress

How to Plan a BBQ in Hong Kong — Without the Stress

How to Plan a BBQ in Hong Kong — Without the Stress

Hong Kong Rooftop BBQ

Hong Kong BBQs aren't backyard affairs.

They're rooftop events, balcony setups, and park facility grills shared with half the building. Space is tight, timing matters, and the grill is usually smaller than you'd like.

But with a little planning — and the right meat — you can throw a proper BBQ without the chaos.

This week's BBQ Pack makes it straightforward: hanger or flank steak, chicken wings, peeled tiger prawns, and cubed beef skewers. All portion-ready, delivered Thursday. You handle the grill. We'll handle the prep.

Step 1: Work Out Your Portions

How much meat do I need?

Nothing derails a BBQ faster than running out of food — or buying three times too much and spending Sunday doing fridge Tetris.

As a general guide:

  • 4 people → around 2kg total meat
  • 8 people → around 4kg
  • 12 people → around 6kg

These figures assume a mixed menu with sides. If it's a meat-heavy crowd with minimal sides, add 20% to be safe.

For a more accurate estimate based on your exact group and menu, use the Meat Planner — it's built around Hong Kong realities, including small fridges, rooftop grills, and mixed appetites.

And if you don't see exactly what you want — just ask. The BBQ Pack is a starting point, not a fixed transaction.

Step 2: Know What You're Working With

Each product in the BBQ Pack earns its place for a reason.

Hanger or Flank Steak
The centrepiece cut. Made for high heat, cooks fast, and delivers rich, beefy flavour that holds up well on a grill. Needs resting and slicing against the grain — but the result is worth it.

Chicken Wings
The crowd-pleaser. Universally accessible, easy to share, and almost impossible to turn down. Start them on indirect heat — they take longer than most people expect.

Peeled Tiger Prawns
Quick to cook, premium feel, and ready to marinate straight from the pack. The fastest thing on the grill — which also means they're the easiest to overcook. Watch them closely.

Cubed Beef Skewers
Portion-friendly and perfectly suited to HK-style BBQs where people are grazing rather than sitting down to a plate. Marinate ahead if you can — they reward it.

Step 3: Sequence the Cook

The sequence to cook meat on a BBQ

The difference between a smooth BBQ and a chaotic one usually comes down to timing.

Start with wings. They take the longest and benefit from indirect heat first — get them on early and move them to direct heat at the end for colour and crispness.

(A note on wings specifically: the indirect-first method works better on a BBQ than the high-heat approach you might use in an oven. On a charcoal grill, direct heat is less predictable — starting over indirect heat renders the fat slowly and dries the skin, which is what actually creates crispness. The final few minutes over direct heat then gives you colour without burning.

If your wings are marinated — particularly with anything honey or soy-based — be extra careful in that final direct heat phase. The sugars in the marinade caramelise fast and can go from golden to burnt quickly. Watch them closely and pull them earlier than you think you need to.)

Add skewers next. They need decent heat but cook through relatively quickly. Keep an eye on them and turn regularly.

Prawns go on last. They're done in minutes — two to three minutes per side is usually enough. Don't walk away.

Finish with steak. It's the showpiece and it needs your attention. Sear over direct heat for colour, then move to indirect heat to finish cooking through evenly.

One thing worth knowing before you light the grill: high direct heat chars the surface quickly, but it doesn't lock in juices — that's one of the most persistent myths in home cooking. What actually matters is managing heat zones throughout the cook. If you want to understand why heat makes such a difference to the final result, Great Cooking Isn't About Recipes — It's About Heat is worth a read before your next BBQ.

Step 4: Don't Forget the Rest

A great BBQ isn't just meat — it's balance.

Simple sides make everything easier, keep costs down, and give people something to do while the grill is working. You don't need anything elaborate — a good salad, some bread, and a dipping sauce alongside the meat is usually all it takes.

For the prawns specifically, try the BBQ Garlic Butter Prawns recipe this week — quick, simple, and designed for exactly this kind of cook.

And if you're thinking about marinades for the skewers, wings, or prawns — Marinades vs Sauces explains when to marinate, when a sauce does the job instead, and why the distinction matters for different cuts and proteins.

Step 5: The Mistakes Worth Avoiding

BBQ Heat Zones

A few small habits make a real difference on the grill:

Don't overload it. Airflow matters. An overcrowded grill steams instead of chars — the same principle as an air fryer basket. Cook in batches if needed.

Rest the meat. This matters more on a BBQ than most people realise. A steak pulled straight from a hot grill and sliced immediately will lose moisture fast. Two to five minutes of resting makes a noticeable difference. Resting Meat After Cooking covers why.

Use heat zones. Direct heat for colour and crust. Indirect heat to finish cooking through without drying out. Most BBQ mistakes come from keeping everything over direct heat for too long.

Watch the quick-cook items. Prawns and skewers are done before most people expect. Set a timer if needed.

Marinate lean cuts ahead of time. Hanger steak, skewers, and prawns all benefit from even a short marinade — it adds flavour and helps retain moisture over direct heat.

Step 6: Keep It Simple

You don't need a backyard to host a great BBQ in Hong Kong.

You need a plan, the right meat, and someone willing to guard the grill.

The BBQ Pack takes the guesswork out — four cuts, one order, delivered Thursday. Everything is portion-ready so you can spend the weekend grilling, not shopping.

Order by noon Monday via WhatsApp.
We'll handle the rest.
